Easy shrimp sandwich

Ingredients

  • 4 Italian buns

  • 1/3 cup mayonnaise

  • 2 tbsp chopped sweet pickles

  • 1 green onion, sliced

  • 1/4 tsp smoked paprika

  • 454-g pkg frozen cooked shrimp, thawed and peeled

  • leafy lettuce, washed and dried

Instructions

  • Preheat oven to 350F. Slice buns horizontally and lay like an open book on a baking sheet. Toast in centre of oven for 5 min.

  • Stir mayo with pickles, onion and paprika in a small bowl. Stir in shrimp until coated. Line warm buns with lettuce. Top with shrimp mixture. Serve with Spicy Slaw.
