We love eggs - they're great for a leisurely weekend brunch yet fast enough to scramble on a weekday morning for a protein boost.

Ingredients

  • 1 tsp butter, or water

  • 1 egg

  • sprinkle salt

  • sprinkle grated parmesan

Instructions

  • Coat a custard cup with butter or pour in water. Crack in 1 egg. With the tip of a knife, gently nick filmy egg-yolk coating, but do not break. Sprinkle with salt and grated Parmesan. Cover with plastic wrap. Microwave on medium 60 to 75 seconds. Let stand 1 minute.
