1 mango
3 tbsp mango chutney
140-g log creamy goat cheese
2 tbsp chopped fresh parsley, or coriander
Peel mango, then slice fruit from stone. Slice into thick strips. In a small bowl, stir mango chutney (remove any big chunks of fruit and chop) with goat cheese and chopped fresh parsley. Spread over sliced focaccia with strips of mango stuffed between bread slices.
This simple stir-together spread is excellent with any crusty bread. Top it off with slices of deli meat or use just as it is! It's a great make ahead - simply cover and refrigerate up to 3 days.
