BBQ deli chicken with Mediterranean mayo

Ingredients

  • 4 oil-packed sun-dried tomatoes

  • 1 green onion

  • 1 cup light mayonnaise

  • 2 deli chickens

Instructions

  • Finely chop tomatoes. Thinly slice onion. Place mayo in a small bowl. Stir in tomatoes and onion. Cut chicken into serving-size pieces, then arrange on a platter. Place bowl of tomato mayo on platter.

Our favourite "cheater" main dish is takeout deli chicken. Serve it warm or cold and add your own homemade touch with a stir-together sun-dried tomato mayo for dipping.
