Ginger ale ice cream float

Ingredients

  • 1/2 cup finely chopped fresh ginger

  • 1 cup granulated sugar

  • 1 tbsp lemon juice

FOR FLOATS

  • your favourite ice cream

Instructions

  • To make ginger ale syrup: Make syrup by mixing sugar with 1/2 cup water in a small saucepan. Bring to a boil over medium-high. Stir in ginger and remove from heat. Cover and let steep for 1 hour. Strain, then stir in lemon juice.

  • To make ginger ale ice cream float: Mix syrup into sparkling water. Top with your favourite ice cream.
