4 peeled garlic cloves
1 medium cauliflower, cut into florets
1 tbsp olive oil
1/4 tsp salt
1/4 cup grated parmesan
1 tbsp butter
1/2 cup warm milk
TOSS garlic cloves and cauliflower with olive oil and salt. Spread out on a baking sheet and roast at 400F, stirring halfway through, until cauliflower is very tender, about 40 min.
TRANSFER to a food processor with parmesan and butter. Whirl, while pouring milk through the spout, until mixture is creamy.
