Homemade Marinara Sauce

Never buy marinara sauce again: take advantage of the abundance of fresh tomatoes and make up a batch of homemade marinara sauce.

Ingredients

  • 10 large vine-ripened tomatoes, about 2 kg

  • 2 tbsp olive oil

  • 1 onion, finely chopped

  • 1 garlic cloves, minced

  • 156-mL can tomato paste

  • 1 tsp granulated sugar

  • 1 tsp salt

  • 1 tsp ground black pepper

  • 1/4 cup chopped fresh basil, or 1 tbsp dried basil leaves

Instructions

  • SEED and coarsely chop tomatoes. They should measure about 10 cups.

  • HEAT a large saucepan over medium. Add oil, then onion and garlic. Cook until onion is soft, 3 to 4 min. Stir in tomatoes, tomato paste, sugar and salt. Season with fresh pepper. Cook, stirring often, until thickened, about 15 min. Stir in basil. Toss with cooked pasta or use as dip for garlic bread.
