1/2 cup water
1/2 cup granulated sugar
1/2 tsp fresh thyme
3 cups peeled, pitted and chopped peaches
BOIL water and sugar until sugar dissolves, 1 to 2 min. Stir in thyme. Let cool, 10 min. Purée peaches with thyme syrup in a blender until smooth. Pour into ice-pop moulds. Freeze for 6 hours or overnight.
