Wasabi-Edamame Dip

Skip the usual veggie dips and head for a protein powerhouse with spicy kick!

Ingredients

  • 1 1/4 cups shelled edamame, or 454-g pkg unshelled edamame pods

  • 1 garlic clove, minced

  • 4 tsp low-sodium soy sauce

  • 1 tbsp rice vinegar

  • 1/2 tsp honey

  • 1/2 tsp wasabi paste

Instructions

  • Bring 3 cups water to a boil in a medium saucepan. Remove peas from pods (if using unshelled edamame pods). Add edamame to boiling water and cook 5 min. Reserve 3/4 cup liquid. Drain and rinse edamame with cold water.

  • Purée edamame with garlic, soy, vinegar, honey and wasabi in a blender. Add reserved liquid while blending until mixture is smooth and creamy. Cool. Serve with cut vegetables or rice crackers.
