4 fast-fry pork chops
1 tbsp butter
2 apples, preferably McIntosh
1/4 cup apple juice
1 tbsp finely grated fresh ginger, or bottled minced ginger
1/2 tsp salt
1/2 tsp dried sage leaves, crumbled
2 tbsp maple syrup
Using a knife, nick edges of chops so they won't curl during cooking. Melt butter in a wide frying pan, preferably non-stick, set over medium-high heat. Add chops. Cook until golden, 2 to 3 minutes per side, then remove to a plate.
Meanwhile, thinly slice unpeeled apples. When chops are removed from pan, add juice, ginger, salt and sage. Using a wooden spoon, scrape up and stir in any brown bits from pan bottom. Add apples. Lay chops overtop. Drizzle with maple syrup. Reduce heat to medium-low. Cover and simmer, stirring halfway through, until apples are tender, 5 to 8 minutes. Great with mashed potatoes.
