Asian guacamole

Not your ordinary avocado dip: Surprise your guests with this zingy Asian variation, complete with pickled ginger.

Ingredients

  • 2 ripe avocados

  • 1/2 tsp hot-chili-garlic sauce

  • 1/4 tsp salt

  • 1 lime

  • 2 green onions

  • 1 tbsp drained pickled ginger

  • 1/4 cup coarsely chopped cilantro

Instructions

  • Slice avocados in half lengthwise, then remove and discard pits. Using a spoon, scoop avocado into a medium bowl. Add the chili-garlic sauce and salt. Coarsely mash with a fork. Squeeze in about 1 tbsp (15 mL) lime juice and stir in. Thinly slice green onions and add half to avocado. Set remainder aside for garnish. Finely chop pickled ginger and stir into avocado. Taste and add more lime juice and chili-garlic sauce, if needed. Stir in chopped cilantro. Turn into a serving bowl. Garnish with remaining green onion and some cilantro leaves. Great with our baked won-ton dippers (also in the Recipe File) or rice crackers.
