Serve this fresh and fast side with our sweet and savoury pork chops.
2 tsp vegetable oil
2 garlic cloves, minced
1 1/2 cups pearl couscous
1/4 tsp salt
2 cups vegetable broth
1/2 171-g pkg spinach, about 4 cups, puréed
1 tbsp finely grated fresh ginger
2 green onions, sliced diagonally
Heat a medium saucepan over medium-high. Add oil, then garlic. Cook until garlic is fragrant, 30 sec. Add couscous, salt and broth. Bring to a boil, then reduce heat to low.
