Spinach Couscous

Serve this fresh and fast side with our sweet and savoury pork chops.

Ingredients

  • 2 tsp vegetable oil

  • 2 garlic cloves, minced

  • 1 1/2 cups pearl couscous

  • 1/4 tsp salt

  • 2 cups vegetable broth

  • 1/2 171-g pkg spinach, about 4 cups, puréed

  • 1 tbsp finely grated fresh ginger

  • 2 green onions, sliced diagonally

Instructions

  • Heat a medium saucepan over medium-high. Add oil, then garlic. Cook until garlic is fragrant, 30 sec. Add couscous, salt and broth. Bring to a boil, then reduce heat to low. Cook, covered, until liquid is absorbed and couscous is tender, about 10 min. Stir in spinach until combined. Keep covered until ready to serve. Fluff just before serving with Sweet & Savoury Pork Chops.
