2 fresh or frozen skinless fish fillets, such as catfish
1 1/2 tsp Cajun seasoning
2 tsp butter
1 tomato, cut into wedges
1 celery stalk, thinly sliced
1/4 cup chunky salsa
generous pinch salt
Sprinkle both sides of fillets with Cajun seasoning. Melt butter in a large, wide frying pan set over medium-high heat. Add fish and cook until golden, 2 to 4 minutes per side.
Meanwhile, prepare tomato and celery. When fish is golden, add to pan along with salsa. Sprinkle with salt. Reduce heat to medium-low. Cover and simmer until fish is cooked through, 4 to 6 more minutes. Stir salsa mixture occasionally as best you can (don't turn fish). Great over rice.
