Cajun catfish fillets

Ingredients

  • 2 fresh or frozen skinless fish fillets, such as catfish

  • 1 1/2 tsp Cajun seasoning

  • 2 tsp butter

  • 1 tomato, cut into wedges

  • 1 celery stalk, thinly sliced

  • 1/4 cup chunky salsa

  • generous pinch salt

Instructions

  • Sprinkle both sides of fillets with Cajun seasoning. Melt butter in a large, wide frying pan set over medium-high heat. Add fish and cook until golden, 2 to 4 minutes per side.

  • Meanwhile, prepare tomato and celery. When fish is golden, add to pan along with salsa. Sprinkle with salt. Reduce heat to medium-low. Cover and simmer until fish is cooked through, 4 to 6 more minutes. Stir salsa mixture occasionally as best you can (don't turn fish). Great over rice.

A shake of Cajun seasoning and a few spoonfuls of salsa tossed in the pan with healthy low-fat catfish makes you feel as if you're dining well on a southern holiday.
