2 thick slices egg or multigrain bread, or your favourite sandwich bread
2 tsp butter, preferably unsalted, at room temperature
1/2 tsp yellow or Dijon mustard, optional
thinly sliced old cheddar or Swiss, about 60 g
Lay bread on counter. Butter one side of each slice. Turn over one slice and spread with mustard, if using, then cover with cheese. Place second slice of bread on top, butter-side up, to form a sandwich. Heat a small frying pan, preferably non-stick, over medium heat. When hot, add sandwich. Cook until deep golden brown on both sides and cheese starts to melt, about 2 minutes per side. Reduce heat to medium-low if sandwich browns before cheese starts to ooze. Using a spatula, remove sandwich from pan. Slice in half and serve immediately.
