Zucchini and cheese bites

Mixed zucchini

Chatelaine Triple Tested

Ingredients

  • 1 zucchini

  • 6 sun-dried tomatoes, finely chopped

  • 1/2 130-g log goat cheese

  • 3 tbsp chopped chives

  • 2 tbsp olive oil

  • fresh pepper, to season

Instructions

  • SLICE zucchini into 1/4-in. rounds and arrange on a platter.

  • COMBINE sun-dried tomatoes with goat cheese, chives and olive oil. Top each round with 1 tbsp cheese mixture. Season with fresh pepper.
