Golden baguette crisps smeared with a creamy garlic spread make the perfect topper for our easy seafood stew.
1 lemon
1/3 cup mayonnaise
2 large garlic cloves
generous pinches salt
pinch of cayenne pepper
6 to 12 slices toasted baguette
To prepare aioli, squeeze a bit of lemon juice into a small bowl. Stir in mayo, garlic, salt and cayenne. Just before serving, spread each toasted baguette slice with 1 heaping tsp (7 mL) aioli and place on a platter. Serve with the remaining garlic spread spooned into a small bowl in the middle of a platter, surrounded by toasts, or float aioli-covered slices in soup. If making ahead, aioli will keep well, covered and refrigerated, for up to 3 days. Toasted baguette slices (without spread) will keep well at room temperature for 1 day.
