Crunchy Japanese apple salad

Chatelaine Triple Tested

Ingredients

  • 1/2 cup canola oil

  • 2 tbsp seasoned rice vinegar

  • 2 tsp minced fresh ginger

  • 2 tsp wasabi paste

  • 1/2 tsp granulated sugar

  • 1 large shallot, thinly sliced

  • 3 radishes, thinly sliced

  • 2 Granny Smith apples, thinly sliced

Instructions

  • WHISK oil with vinegar, ginger, wasabi and sugar in a medium bowl. Add shallot, radishes and apples. Toss well to coat.

Serve with Vegetarian BBQ miso eggplant.
