Spicy Honey

This hot honey recipe from the Elena team is the perfect accompaniment to their Dany Pizza, a nostalgic ode to a Montreal classic.

Ingredients

  • 2 tsp ground Espelette pepper or your choice of chili

  • 1/2 tsp flaky sea salt

  • 1 cup good-quality unpasteurized honey

  • 1 250-mL jar, with a lid

Instructions

  • In a small pot over medium-high, bring to boil enough water to cover a 250-mL jar.

  • In a small bowl, whisk together pepper, salt and 1 1/2 tbsp water.

  • In another small pot, combine honey and pepper water. Cook over low until honey is warm and fluid, about 1 to 2 min.

  • Pour the warm honey directly into jar and seal tightly. Take the boiling water off the heat and gently submerge the sealed mason jar into the water. Allow it to steep until the water has cooled down completely. The honey will keep in this jar at room temperature for several months.

Serve and enjoy

This hot honey is best served with a slice (or four) of Elena's Dany Pizza recipe.
