Pistachio-Feta Pesto

Pistachio-feta pesto on top of roast lamb with a side of caponata.

This fresh take on pesto is delicious as a dip. It will also brighten up grilled meat and poultry.

Ingredients

  • 2 garlic cloves, peeled

  • 2 green onions, chopped

  • 3/4 cup crumbled feta

  • 1/2 cup fresh mint leaves

  • 1/2 cup shelled pistachios

  • 1/4 cup extra-virgin olive oil

  • 2 tbsp lemon juice, about 1/2 lemon

Instructions

  • Whirl all ingredients in a food processor until smooth, about 1 min.

Calories 59, Protein 2g, Carbohydrates 2g, Fat 5g, Fibre 1g, Sodium 77mg.

Delicious served alongside our roast lamb and caponata dinner.
