This fresh take on pesto is delicious as a dip. It will also brighten up grilled meat and poultry.
2 garlic cloves, peeled
2 green onions, chopped
3/4 cup crumbled feta
1/2 cup fresh mint leaves
1/2 cup shelled pistachios
1/4 cup extra-virgin olive oil
2 tbsp lemon juice, about 1/2 lemon
Whirl all ingredients in a food processor until smooth, about 1 min.
