Steak baguette with curried mayo

Next time you have leftover barbecued steak, try this quick sandwich. The curried spread is an unexpected taste twist that takes only seconds to make.

Ingredients

  • 1/4 cup mayonnaise, or creamy Caesar salad dressing

  • 1 tsp curry paste, or hot-chili-garlic-sauce

  • 1 demi baguette, or 2 crusty buns

  • 1 grilled steak, or a few slices of roast beef

  • 1 plum tomato

  • handful baby spinach, or salad greens

  • 4 slices swiss or cheddar

Instructions

  • In a small bowl, stir mayonnaise with curry paste until blended. Slice baguette in half and spread both sides with curry mayo. Thinly slice steak. Slice tomato into rounds. Layer bottom half of bread with spinach, then steak, tomato and cheese. Top with remaining bread. Cut in half.

  • Cover tightly with plastic wrap or seal in a bag and refrigerate up to a day. Keep cold until ready to eat.
