Ingredients

  • 2 garlic cloves

  • 2 cups fresh leaves of basil

  • 1 cup crumbled feta

  • 2 tbsp olive oil

  • 1 small loaf focaccia or whole wheat bread

  • 8 to 10 thin slices deli ham

Instructions

  • Coarsely chop garlic. Place in a food processor. Add basil and feta. Pulse until chopped. Then with motor running, slowly pour in oil. Continue pulsing until evenly mixed.

  • Slice loaf in half horizontally. Spread pesto mixture on both halves. Overlap slices of ham on bottom bread half. Cover with top half of bread. Gently press down. Wrap tightly in plastic. Sandwich will keep well, refrigerated, up to 4 hours. Cut into small sandwiches. Spread will keep well, covered and refrigerated, up to 2 days.

Sandwiches are the ultimate "to go" food, with endless variations. Instead of the usual mayo or Dijon spread, keep this feta pesto and the other spreads in this issue in your refrigerator. They're great with roasted chicken, too!

Packed To Go

Cut sandwich into small bites and spear with toothpicks to hold together. Arrange in a single layer or in layers separated by waxed paper in plastic containers and seal.

Kitchen Tip

Taste feta before using. If very salty, place in a colander and rinse under cold running water. Pat dry with paper towels.
