Bistro chicken sandwich

Ingredients

  • 3 tbsp regular or light mayonnaise

  • 1 garlic clove, minced

  • 4 cups sliced cooked chicken

  • 2 tomatoes

  • 1/4 cup shredded fresh basil

  • 1 baguette

  • 130-g log creamy goat cheese

  • 1 pinch salt and pepper

Instructions

  • In a small bowl, stir mayonnaise with garlic. Discard skin from whole chicken and remove meat from bones. Tear or slice chicken into bite-size pieces. Slice tomatoes. Shred basil. Slice baguette crosswise into 4 pieces, then slice each in half horizontally. Place pieces cut side up on counter.

  • Spread with garlic-mayo mixture. Crumble half the goat cheese over bottom halves and mash into bread. Top with chicken. Sprinkle with salt and pepper. Cover with tomatoes. Crumble on remaining goat cheese. Sprinkle with basil. Add top halves of baguette. Great with a cold beer.
