Red And Green Salad With Caper Vinaigrette

Chatelaine Triple Tested

A colourful side salad of butter lettuce and radicchio with caper vinaigrette.

Ingredients

  • 2 heads butter, Boston or bibb lettuce, torn

  • 1 head radicchio, torn into pieces

  • 1/4 cup extra-virgin olive oil

  • 2 tbsp red-wine vinegar

  • 1 small garlic clove, minced

  • 1/2 tsp Dijon mustard

  • 2 tbsp chopped capers

Instructions

  • Combine lettuce and radicchio in a large bowl. Set aside.

  • Whisk oil with vinegar, garlic, Dijon and capers in a medium bowl. Season with pepper.

  • Pour vinaigrette over lettuce and toss until well coated.
