Great chicken Caesar

Ingredients

  • 1 large head romaine lettuce

  • 500 g sliced roasted chicken breast, or 3 cups cubed cooked chicken or smoked turkey

  • 1 large yellow, orange or red bell pepper

  • 1/2 cup light creamy Caesar salad dressing

  • pinch of freshly ground black pepper

  • 1/2 cup freshly grated parmesan

  • 2 cups croutons

Instructions

  • Tear or cut lettuce into bite-size pieces. Cut chicken slices into 1/2-inch (1-cm) strips. Seed and julienne pepper. In a large bowl, toss lettuce with chicken and pepper strips.

  • When ready to serve, pour dressing over top and toss until coated. Taste and, if you wish, add more dressing. Sprinkle with black pepper, Parmesan and croutons. Serve right away with a crusty baguette and glass of dry red wine.
