Coriander and toasted sesame salad dressing

Chatelaine Triple Tested

Ingredients

  • 2 tbsp sesame seeds

  • 2 large green onions, or scallions, trimmed and chopped

  • 1 tbsp coriander, or cilantro leaves

  • 1 tsp caster or superfine granulated sugar

  • 1 tbsp rice vinegar

  • 1 tbsp light soy sauce

  • 3 tbsp sunflower oil

  • 2 tsp sesame oil

  • salt

  • fresh pepper

Instructions

  • Dry fry the sesame seeds in a small frying pan over a medium heat until toasted and starting to release their aroma. Cool and transfer to a blender.

  • Blend to a paste with the spring onions/scallions, coriander/cilantro, sugar, vinegar, soy and a pinch of salt.

  • Add the oils and blend again until amalgamated.

  • Adjust seasoning and serve.
