Spicy Nutty Salad Dressing

Serve with a soba noodle bowl packed with healthful ingredients: tofu cubes, edamame, cucumber rounds, sweet potato, bok choy and julienned carrots.

Ingredients

  • 3 tbsp canola oil

  • 2 tbsp natural almond or peanut butter

  • 2 tbsp rice vinegar

  • 1 tbsp tamari

  • 2 tsp honey

  • 2 tsp finely grated ginger

  • 1 garlic clove, minced

  • 1/4 tsp hot-red-chili-flakes

Instructions

  • WHISK all ingredients together in a medium bowl. Serve with desired grain bowl or salad ingredients. Dressing will keep well, covered and refrigerated, up to 3 days.
