Chatelaine Triple Tested

Berry and cherry season is in full swing. Freeze fruit at its peak in a single layer on a baking sheet, then transfer to a zip-lock bag for storage. Use fruit throughout the year in one of our instant sorbets.

Ingredients

  • 2 cups frozen black cherries

  • 2 tbsp superfine sugar

  • 2 tbsp amaretto

  • 1 tsp lemon juice

  • chopped almonds, (optional)

Instructions

  • WHIRL 2 cups frozen black cherries with 2 tbsp superfine sugar in a food processor until crumbly. With the motor running, gradually pour in 2 tbsp amaretto and 1 tsp lemon juice until smooth but not runny. Serve topped with chopped almonds.

You don't have to stick to cherries: any frozen fruit will do. Following the same methods, try these flavour variations.

  • Strawberry Rose: 2 cups frozen strawberries + 2 tbsp superfine sugar + 2 tsp rosewater + 2 tsp lemon juice
  • Raspberry margarita: 1 ½ cups frozen raspberries + 1 tbsp granulated sugar + 1 tbsp tequila + 4 tsp lime juice
  • Tropical: 1 cup frozen chopped mango + 1 cup frozen sliced banana + 3 tbsp orange juice + 2 tbsp honey
