Soak in this tropical pineapple-bourbon cocktail from former Toronto restaurant Lamesa Filipino Kitchen.
3 tbsp Makers Mark bourbon
1 1/2 tbsp fresh lemon juice
1 1/2 tbsp pineapple-cinnamon simple syrup*
2 tsp freshly grated ginger
ginger ale
SHAKE all ingredients in a cocktail shaker. Strain over a rocks glass filled with ice. Top with ginger ale and garnish with candied pineapples.
*Pineapple-cinnamon simple syrup: Combine 1 cup finely diced pineapple with 2 cups each granulated sugar and water, 1/2 tsp ground cinnamon and 1/4 tsp ground nutmeg. Gently boil until syrup thickens slightly. Cool completely, then strain before using. Reserve candied pineapples for garnish.
