Savouring squash

Learn how to select, store and prepare this fall vegetable

Squash is the seasonal favourite this time of year. Among the different varieties, butternut squash is the easiest to work with. It has a long-necked bell shape, with smooth beige-coloured skin. It's easier to peel and has a smaller ration of seeds-to-flesh. For perfect peeling, make a slit in the skin and microwave on high for three to six minutes—just to soften the skin. Using a sharp knife, cut off and discard the peel. Slice squash in half lengthwise, then scoop out and discard seeds.
