Zucchini

Here's what we suggest you do with leftover zucchini.

Baked veggie boats

Halve 2 zucchinis lengthwise. Scoop out seeds. Brush cut sides with olive oil. Sprinkle with finely chopped garlic, grated cheddar and bread crumbs. Lay on baking sheet, cut- side up. Bake at 350F until golden, 25 min.

Vegetable “pasta”

Peel ribbons of raw zucchini with a vegetable peeler. Sauté with oil and garlic until just tender. Top with pasta sauce and sprinkle with grated parmesan.
