Passata

Quick tomato soup

Sauté 2 chopped celery stalks and 1 chopped onion in butter in a pot. Stir in 2 tbsp flour. Pour in 2 cups each passata and water, 1 cup milk, 1 tbsp tomato paste, 1 tsp each dried basil and sugar and 1/4 tsp each smoked paprika and salt. Purée until smooth.

Curried fish stew

Purée 2 cups passata, 1 cup vegetable broth, 1 chopped onion, 1 tbsp tomato paste, 1 1/2 tsp Madras curry paste, 1/2 tsp each Tabasco and thyme in a blender. transfer to a pot and bring to a boil. add 2 chopped white fish fillets and stir until cooked through.
