How to spatchcock a chicken

In just three simple steps, you too can butterfly a whole chicken with kitchen shears.

In this short video, our associate food editor, Irene Ngo, shows us how to spatchcock a chicken in three easy steps. What does it mean to spatchcock (or butterfly) a chicken? You're simply removing the backbone, so that your chicken lays flat when cooking.
