Crispy veggie bites

Stir 1/4 cup bread crumbs with 2 tbsp parmesan, 1 minced garlic clove and 1/4 tsp each salt and pepper in a shallow dish. Halve artichokes, then toss with 2 tsp olive oil. Roll in bread crumb mixture. Bake at 400F until golden, about 20 min. Serve with Dijonnaise.

Cheater’s Shrimp Pilaf

Whisk 1 minced garlic clove with 2 tbsp oil, 2 tsp rice vinegar and 1/2 tsp salt in a bowl. Add 2 cups cooked rice, 1 cup cooked shrimp, 1/2 cup chopped artichokes, 1/4 cup toasted slivered almonds and 1 chopped green onion. Toss to coat.
