2 onions, thickly sliced
6 kg fresh or thawed frozen turkey, unstuffed
1 tbsp dried sage
1 tsp dried savoury
2 tbsp butter
1 tsp paprika
Pinch kosher or coarse salt
To roast a fresh or thawed unstuffed turkey, preheat oven to 325 F (160 C). Scatter 2 thickly sliced onions in a roasting pan. Rinse turkey. Pat dry. Sprinkle cavity with 1 tbsp (15 mL) dried sage leaves and 1 tsp (5 mL) dried savoury. Tuck wings under. Tie legs together. Place turkey on onions. Rub bird all over with 2 tbsp (30 mL) butter mixed with 1 tsp (5 mL) paprika. Generously sprinkle with Kosher salt. Cover and roast at 325 F (160 C) for 2 hours. Then uncover and baste with pan juices. Continue roasting, uncovered, until turkey has roasted a total of 20 min a lb (500 g) or 4 hours for a 12 lb (6 kg) bird.
