Tortellini in blushing cream

Tortellini in blushing cream

Ingredients

  • 700-g pkg fresh cheese or meat tortellini pasta

  • 5 slices prosciutto

  • 1/2 cup coarsely chopped fresh basil

  • 1 cup tomato sauce, preferably tomato and basil

  • 250-mL container 35% cream, about 1 cup

  • 1/2 tsp salt

Instructions

  • Bring a large saucepan of water to a boil. Add tortellini. Cook according to package directions, 6 to 8 minutes. Meanwhile, slice prosciutto into thick strips. Chop basil. Then pour pasta sauce and cream into a large, wide frying pan. Bring to a boil over medium-high heat, stirring often, until sauce is bubbly, about 2 minutes.

  • When pasta is cooked, drain well. Then add to sauce in pan. Stir until evenly coated, about 1 minute. Remove from heat and stir in prosciutto, basil and salt. Spoon into pasta bowls. Serve with grated Parmesan or crumbled blue cheese for sprinkling overtop, if you like.
