2 tbsp butter
500-g pkg turkey sausages
1 onion, thinly sliced
1 green apple, sliced
2-Jan Savoy cabbage, shredded, about 8 cups
1 tbsp maple syrup
1/4 tsp salt
Melt butter in a large non-stick fryingpan over medium-high. Lightly score sausages, then sear, turning often, until golden, about 2 min. Move sausages to side of pan and add onion and apple. Reduce heat to medium. Sauté onion and apple until slightly softened, about 2 min. Turn sausages occasionally. Add cabbage and 1/2 cup water. Pan will be full. Gently boil, covered, stirring halfway through, until cabbage wilts, about 5 min. Stir in maple syrup and salt. Season with pepper. Continue cooking until sausages are cooked through, 5 more min. Serve sausage over bed of cabbage.

Gewürztraminer comes into its own when served with a bold dish like sausages. The sweet and savoury components of the cabbage integrate well with the fruity intensity and acidity of this Alsatian wine. Our pick: Domaine Pierre Sparr Gewürztraminer, France, $16.
