Chatelaine Triple Tested

For the holiday season, having go-to appetizer recipes in your back pocket is key. Hold onto this one – these delicate scallops with a sweet touch of maple are pure, bite-sized decadence.

Ingredients

  • 400-g pkg jumbo scallops

  • 2 tsp canola oil

  • 2 tbsp water

  • 1 tbsp maple syrup

  • large leaves of baby spinach, for garnish

Instructions

  • PAT scallops very dry with paper towel.

  • HEAT a large non-stick frying pan over medium-high. Add oil, then scallops. Cook 1 min, then flip. Cook 1 more min, then transfer scallops to a plate. Reduce heat to medium.

  • ADD water, maple syrup and any scallop juices to pan. Stir until syrupy, about 15 sec. Brush maple mixture over scallops and sprinkle with spice blend. Serve each scallop on a baby spinach leaf.
