Tipsy gingered apricots

Capture all the brightest flavours of the summer harvest with delicious small-batch homemade preserves!

Ingredients

  • 600 g apricots, about 8

  • 1 2/3 cups orange liqueur, such as Grand Marnier

  • 1 2/3 cups water

  • 1 cup granulated sugar

  • 4 1/8-in. slices fresh ginger

Instructions

  • PIT apricots and cut into wedges. They should measure 3 cups. Drop apricots into a 1-L Mason jar (it should be filled to the top).

  • BOIL liqueur with water, sugar and ginger in a medium saucepan over medium- high, stirring occasionally, until liquid is syrupy and has reduced to 1 3/4 cups, 25 to 27 min. Remove from heat and let stand 15 min.

  • POUR syrup into jar over apricots. Cool completely at room temperature, about 2 hours. Apricot preserves can be refrigerated for up to 2 weeks.
