Béarnaise burgers

Andreas Trauttmansdorff

Ingredients

  • 250 g asparagus

  • pinch salt

  • pinch ground black pepper

  • olive oil

  • 2 frozen beef sirloin burgers

  • 2 tbsp bottled Béarnaise sauce

  • 1 green onion, sliced (optional)

Instructions

  • Half-fill a large, non-stick frying pan with water. Set over high heat. Bring to a boil. Meanwhile, snap and discard tough ends from asparagus. Slice spears in half diagonally. Boil until tender-crisp, 2 to 4 minutes. Drain. Place on plates and sprinkle with salt and pepper. Cover. Reduce heat to medium-high. Coat pan with oil. Add burgers. Cook about 5 minutes per side. Place burgers over asparagus (set a few spears aside as garnish). Spoon Béarnaise sauce overtop. Sprinkle with onion and a few asparagus spears.

"Fast food" at home is just the ticket when you're trying to beat the clock. And it's easy to make when you start with frozen burgers. Our Béarnaise burger is dressed up with bright green asparagus and a dollop of decadent store-bought Béarnaise sauce.
