Apple relish

Ingredients

  • 3 crisp red apples, cored

  • orange zest, from 1 orange

  • 1 cup water

  • 1/4 cup cider or white vinegar

  • 1/2 cup raisins

  • 1/2 cup chopped toasted nuts, such as pecans

  • 1 box Certo fruit pectin

  • 5 1/2 cups granulated sugar

Instructions

  • Do not peel apples. Coarsely chop. Measure 4-1/2 cups chopped apples into a large saucepan. Add orange peel, water, vinegar, raisins and nuts. Stir in pectin crystals.

  • Place over high heat and bring to a full boil, uncovered and stirring often. Stir in sugar. Continue stirring until mixture comes to a full boil again. Stirring constantly, boil for 1 min. Remove from heat.

  • Stir frequently for 5 min., skimming off any foam. Pour quickly into warm sterilized jars, filling to 1/4 inch (0.5 cm) from rim. Seal while hot with sterilized 2-piece lids. Relish sets as it cools. Once set, store in the refrigerator. Relish will keep well in the refrigerator for 6 weeks.
