Sweet 'n' sour cucumber salsa

Ingredients

  • 1/2 English cucumber, unpeeled

  • 1 red bell peppers, seeded

  • 1 to 2 green onions

  • 1/2 cup chopped fresh dill

  • 3 tbsp freshly squeezed lime or lemon juice

  • 2 tbsp granulated sugar

  • 1/4 tsp salt

Instructions

  • Finely dice cucumber. You should have about 2 cups (500 mL). Finely chop pepper and onions. Place vegetables in a large bowl, then stir in remaining ingredients. Use right away or cover and refrigerate for up to 1 day.

Lime and dill perk up cucumber to make a cool companion for any fiery meat dish.
