Bruschetta salsa

Ingredients

  • 380-mL jar bruschetta topping, preferably Classico

  • 1 roasted red pepper

  • 3 tbsp chopped fresh mint

Instructions

  • Place bruschetta in a medium bowl. Pat pepper dry with paper towel, then coarsely chop. Stir into bruschetta with mint. Taste and add a pinch of salt, if needed. After an hour or two at room temperature, it will start to water out. Delicious as a dip or sauce.

Calories 9, Carbohydrates 1g, Fat 0.8g, Fibre 0.1g, Sodium 45mg.

Add party personality to a ready-made bruschetta topping by adding fresh mint and chunks of roasted pepper from a jar or the supermarket deli cart. Great dolloped over BBQ deli chicken.
