1/4 cup Tabasco sauce
2 tbsp honey
1/2 tsp cayenne pepper, or Cajun seasoning
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 kg chicken wings
Preheat oven to 425F (220C). For easy cleanup, line a baking sheet with shallow sides with foil. In a large bowl, stir Tabasco with honey, cayenne, salt and pepper. Add wings and stir to coat. Spread wings, skin-side down, in a single layer on baking sheet.
Roast in centre of 425F (220C) oven, turning skin-side up after 15 minutes, until wings are crispy, from 30 to 40 minutes total. If wings darken too quickly, loosely cover with a tent of foil. Remove foil for last 5 to 7 minutes of roasting to crisp skin. Serve immediately with creamy coleslaw.
