No-sugar fresh strawberry spread

Ingredients

  • 2 1/2 cups crushed strawberries, about 2 pints

  • 1 tbsp freshly squeezed lemon juice

  • 7 packets low-calorie sweetener

  • 1 box Certo Light fruit pectin crystals

Instructions

  • Place crushed strawberries in a large bowl. Stir lemon juice, low-calorie sweetener and Certo into fruit. Let stand for 30 minutes, stirring occasionally.

  • Pour into clean jars or plastic containers. Cover with tight lids. Spread will keep well for months in the freezer or for 1 week in the refrigerator. Use as you would jam. It's also wonderful stirred into yogurt.

Calories 8, Protein 0.1g, Carbohydrates 2g, Fat 0g.

What better way to capture the fresh sweetness of fruit than in this spread. Great on toast and tortillas.

Crushing Berries

To give character and texture to your spread, use a potato masher to crush berries or finely chop berries. A food processor will quickly turn berries into a smooth purée and the extra juice that comes from berries can prevent the spread from setting.
