Fiery plum-glazed chicken

Ingredients

  • 6 chicken legs, or breasts, or 8 chicken thighs

  • 1 cup plum sauce

  • 2 large garlic cloves, or 2 tsp bottled minced garlic

  • 1 tsp finely chopped fresh ginger, or bottled minced ginger

  • 1/4 tsp salt

  • 1 to 3 tsp Tabasco sauce

  • 2 tbsp lemon juice, optional

Instructions

  • Preheat oven to 375F (190C). Remove skin from chicken, if you like. Then place chicken on a baking rack set on a foil-lined pan for easy cleanup.

  • Stir plum sauce with garlic, ginger and salt. Stir in hot sauce using 1 teaspoon (5 mL) for mild, 2 teaspoons (10 mL) for medium and 3 teaspoons (15 mL) for incredibly hot. Taste and, for a citrus zing, stir in lemon juice. Spoon some of this thick sauce over chicken. Spread to cover most of chicken, remembering that as chicken heats, sauce will run down sides a little.

  • Bake in centre of 375F (190C) oven for 30 minutes, then spoon on more sauce. Continue baking, spooning again with remaining sauce near end of baking, until chicken is done as you like, from 15 to 30 more minutes.

Shopping tip

Plum sauce is usually sold in the oriental-food section of supermarkets, near the teriyaki and soy sauces.
