Buttermilk-cornbread waffles

Chatelaine Triple Tested

Every element of this Southern classic is better for you. Whole wheat waffles, oven-baked chicken and a drizzle of spicy honey. Oh, and did we mention it's to die for?

Ingredients

  • 1/3 cup all-purpose flour

  • 1/3 cup whole-wheat flour

  • 1/4 cup fine cornmeal

  • 1/4 cup cornstarch

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1 cup buttermilk

  • 1/3 cup canola oil

  • 2 egg whites

  • 1 tbsp granulated sugar

Instructions

  • PREHEAT waffle maker according to manufacturer’s instructions.

  • WHISK flours with cornmeal, cornstarch, baking powder, baking soda and salt in a large bowl. Stir in buttermilk and oil, being careful not to over-mix.

  • BEAT egg whites in a medium bowl with an electric mixer until soft peaks form when beaters are lifted, about 1 min. Sprinkle in sugar and continue beating until glossy peaks form, about 1 more min. Fold egg white mixture into batter until just combined.

  • SPRAY waffle maker lightly with oil. Ladle in batter and cook until golden, 3 to 4 min.

Serve with faux-fried chicken.
