Mojito Ice Pops

Chatelaine Triple Tested

If an ice-cold cocktail isn’t cold enough for you this summer, how about ice pops? These boozy treats will liven up any backyard bbq you host this season.

Ingredients

  • 3/4 cup water

  • 1/2 cup granulated sugar

  • 1/2 cup fresh mint leaves

  • 2/3 cup lime juice

  • 3 tbsp white rum

  • 2/3 cup soda water

  • 1 small lime, thinly sliced (optional)

Instructions

  • BOIL water with sugar in a small saucepan until sugar dissolves. Purée in a blender with mint, lime juice and rum. Stir in club soda. Pour into moulds. Add a lime slice to each mould. Freeze until firm, 6 to 8 hours.
