4 leaves of fresh mint
1/4 cup lime juice, from 2 large limes
2 tsp icing sugar
ice cubes, crushed
1/4 cup white rum
1/4 cup soda water
sprig of mint
Place mint leaves in a long mojito glass (often called a "Collins" glass). Add lime juice and sugar. Using a muddler, or the back of a spoon, gently smash mint into lime juice and sugar. Add crushed ice, then rum and stir. Top up with club soda. Garnish with a mint sprig.
There are countless recipes for the mojito (pronounced moh-HEE-toh), but this is the one Hemingway himself enjoyed at the mojito's place of birth: La Bodequita del Medio in Havana, Cuba.
