This delicious cocktail is the perfect accompaniment to a summer taco feast.
3 fresh pineapple chunks, (2-in. cubes)
jalapeño peppers
4 oz ginger beer
2 oz pineapple juice
1 1/2 oz tequila
ice cubes
chili powder
coarse salt
Muddle together pineapple and as many jalapenos as desired; add to shaker along with ginger beer, pineapple juice and tequila. Add ice cubes; shake until well chilled.
Rim glass with chili powder and coarse salt. Strain cocktail into glass with fresh ice. Garnish with slice of jalapeno cilantro, if desired.
