Grapefruit bitters aside, this is a classic gin martini—zesty, fresh and light. Since your friends may want more than one, be kind to your future self by making this freezable batch version, which is ready to pour whenever you need it.
12 oz pink gin, see Kitchen tip
2 oz dry white vermouth
24 drops grapefruit bitters
6 pickled onions
6 grapefruit twists
Fill a large mixing glass with ice. Pour in gin and vermouth. Stir for about 45 sec. (You may have to do this in 2 batches.) Strain drink into an empty gin bottle or cocktail carafe. Freeze until ready to use.
To serve, chill 6 martini glasses by filling them with ice until thoroughly cooled. Discard ice. Strain the drink into chilled glasses. Add 4 drops of bitters and a pickled onion to each martini. Garnish with a grapefruit twist.
